Starter Buffet
Classic Waldorf Salad
Crisp apples, celery, grapes, and toasted walnuts in a light crème fraîche dressing, served in a salad cup
Smoked Salmon Platter
Thinly sliced smoked salmon served with capers, red onion, crème fraîche, and Belgian waffle pieces
Sliced Reindeer Roast Platter
Roast reindeer served with horseradish cream, whole-grain mustard, and pickled onions
Tomatoes Two Ways:
Heirloom tomato and burrata
Caprese skewers
Antipasti Platter
Artisan cured meats (prosciutto, salami, bresaola), marinated olives, artichokes, and roasted peppers
Whitefish with White Wine
Fresh whitefish “cooked” in white wine, served with mango and red onion
Main Course Buffet
Pan-Seared Arctic Char
Pan-fried Arctic char fillets with lemon-infused beurre blanc sauce and fresh herbs
Truffle Risotto with Funnel Chanterelles
Creamy Arborio rice with funnel chanterelle mushrooms and Parmesan, finished with white truffle oil
Reindeer Shank with Porter BBQ Sauce served with crispy potatoes and horseradish
Dessert Buffet
Selection of Sweet Treats Including plated servings of home made sea buckthorn ice cream with Nordic elegance, meringue, toasted almonds, and lingonberries
